Hey everyone! Im back at it again with another simple and easy recipe (chai inspired, of course).

I’m trying to keep busy during quarantine, so I’ve been working on the blog quite a bit. You may have noticed minor design changes to the site, I’ve been tweaking things (like the new subscription box - check it out and subscribe if you haven’t yet). 


Other than the blog, I’ve been keeping busy with my online photography class and learning graphic design! Also, I’ve gotten back into painting (mostly acrylic) which I haven’t really had time to do in a while. There’s just something so therapeutic about painting outside with some indie music playing in the background. 

On top of that, if you know me personally then you know how much I love music and I do something musically every single day. I like to mess around on my instruments and producing music on my computer. 

I’m finding that this free time is making me more creative, it’s a change of pace for sure. What have you been doing during quarantine? Comment below!

So having all this time at home also allows for me to experiment with some recipes, which is bringing us to today’s post: Chai Butter.


Chai Butter is amazing, you can put this on bread, to muffins, chai french toast, and personally I love it on scones. It’s nice and has that chai flavor, but creamy and sweet as well. A must-try for any chai fan!

What you’ll need:


  • 1 stick butter (softened)

  • 1 1/2 tablespoon chai spice 

  • 2 tablespoon maple syrup

  • Food plastic wrap

  • Fork or electric mixer

Chai spice: (makes more than necessary for the butter)

  • 2 tablespoons ground ginger

  • 2 teaspoons ground cloves

  • 4 teaspoons nutmeg

  • 1/4 cup ground cinnamon

These are my recommended amounts of spice and maple syrup, but feel free to adjust to your taste.

Instructions:


Put the softened butter into a bowl. Measure out the 1 1/2 tbsp. of the well mixed chai spice and place in the bowl as well. Add in the maple syrup.

Take either a fork or an electric mixer (if you want a smoother consistency) and mix it together until thoroughly combined. Taste it and make sure it’s sweet enough! You can always add more maple syrup if you’d like.

Get out a decent sheet of plastic food wrap and a spoon and add spoonfuls of the chai butter in the middle of the wrap, horizontally creating what will become a “log”.

Grab the bottom of the sheet and roll to shape the butter, and continue rolling then add a second sheet to make sure it’s secured. Twist the ends to close it.

Place the chai butter in the fridge for a few hours (I left it in there for about 5 hours allowing it to take shape), as long as it needs to solidify. 

While my chai butter was chilling, I decided to break out the lavender scone mix I had bought a little while back. I got it from a local lavender farm here, and I thought it would go well with the chai butter.

Once the scones were out of the oven and still warm, I spread on some chai butter and it was  a m a z i n g ! I love this recipe so much and it’s SO easy and there’s not too many ingredients.

Ingredients:



  • 1 stick softened butter
  • 1.5 tbsp chai spice
  • 2 tbsp pure maple syrup



    Instructions:

  • step one - Place the softened butter, chai spice, and aple syrup in a bowl. Mix with either a fork or electric mixer until combined.

  • step two - Grab a sheet of food plastic wrap and set down. One spoonful at a time, place the chai butter mixture in the middle of the sheet lining up horizontally.

  • step three - Grabbing the bottom of the plastic sheet, roll upwards shaping the butter into a log. Add a second sheet to make sure it's sealed, and twist the ends to secure.

  • step four - Store in fridge until the chai butter has firmed up and taken shape. When you're ready to use, enjoy!
