The Perfect Chai Enthusiast Breakfast

If you're a full time resident of Chai-Land, like the team at ITRYCHAI, then I may have found THE perfect way to start your day..... Cinnamon Roll Bread with Chai Frosting.
One of my personal favorite breakfast food indulgences are cinnamon rolls. Nothing beats this sugary treat in my book. Top that with a Chai infused icing and its the perfect pairing to start your day, or really anytime you want (Afternoon Chai and Cinnamon Rolls anyone?). You'll get all those chai-like spice notes that you enjoy and a healthy dose of a sugar buzz on top of that. Serve that up with an iced or hot chai made with Jasmine’s Chai Concentrate recipe , or our favorite chai this month, or any chai you have on hand and you'll have a winning combo for the chai enthusiast .
I came across this recipe while spending some time at my local Barnes and Noble book store. I was looking through some cook books when I came across this cookbook Half Baked Harvest - Super Simple. Apparently the author also has a popular blog. Personally I had never been aware of the existence of this particular blog, but now I'll be checking this out for inspiration. Anyway, when perusing the cookbook I came across a recipe that spoke to me - the Cinnamon Roll Bread w/ Chai Icing. Needless to say I purchased the book merely to try this recipe. Not only is this recipe a winner but so are several other recipes I've tried in this book.
The recipe involves a 3 part process. First you have to make a bread dough that you can let rise that day
Then you roll the dough out, sprinkling with a wonderful cinnamon/sugar concoction and roll it all up. After cutting and placing in the loaf pan it looks like 6 cinnamon rolls squished together and this becomes your bread.You let that rise and it looks like this:
Bake it off and whip up your Chai icing. Spread it on top. Pic
Here's my thoughts on ease of making and some slight improvements you can try.
Scale 1-5 (with 1 being easy for anyone and 5 being a bit more involved)
Difficulty Level= 3
Time Commitment= 3
You have to make the dough so if you never have done that before you might take a bit longer in that step. But it’s not hard. And until you let the dough rise, roll it, rise, bake and then frost it..... it does take some planning and time, but you can as suggested in the recipe let the dough once its rolled up and placed in the pan rise overnight in the fridge and then bring to room temp for about an hour or so and bake off the next day. And is it worth it? Absolutely!
Suggestions: If you wanted to vary this a bit more you could use Jasmine’s Chai spice mix instead of the other individual spices in the icing. Just substitute the total amounts of dry spices in the recipe equally for same amount of Jasmine’s Chai Spice. Next time I make this I'll try that. Alternatively you could go a bit more crazy and use Jasmine’s Chai spice mix IN ADDITION to the cinnamon/sugar mix that goes into the rolls. Or you could just follow the recipe as is but add to the icing other chai spices that you enjoy and make it even more chai-like.
Serve with a chai to take this to a whole new level and start your day.
Recipe
Everyday Bread Dough
1 Cup Warm Milk
1 packet instant yeast
1 TB Honey
2 Large Eggs, beaten
4 TB salted butter, melted
4 Cups AP Flour
1/2 Kosher Salt

1. In a stand mixer with a Doug hook combine all the ingredients above. Beat 4-5 minutes until all the flour is incorporated.
2. Cover ands let sit at room temperature until doubled in size ( 1-1.5 hours)
3. Proceed to next step
For the Cinnamon Rolls
6 TB unsalted Butter softened
3/4 Cup packed brown sugar
1 1/2 TSP ground cinnamon
The Dough you just made above

1. grease a 9 x5 inch loaf pan and line with parchment paper. Combine brown sugar and cinnamon
2. Once your dough has doubled, put it on a floured surface, punch it down and roll it into a ball
3. With a rolling pin, roll the dough out into a 12 x 18 inch rectangle .Doesnt't need to be exact, just eyeball it.
4. Spread the butter all over the dough and then sprinkle w/ cinnamon sugar mixture
5. Roll the dough up, starting with the edge closet to you into a log. Try to keep everything even and tight.
6. Cut the long into 6 equal pieces and place them into the prepared loaf pan.
7. Let rise about 1 hour in a warm place OR cover with plastic wrap and stick into fridge to rise overnight. * If refrigerated, bring back to room temp ( about 1-2 hours)
8. Preheat oven 350 F
9. Place loaf pan on a rimmed baking sheet and bake 30-35 minutes until golden. Cool for 10 minutes.
Chai Frosting
4 oz. Cream Cheese at room temp
4 TB Slated Butter at room temp
1 1/2 TSP vanilla extract
1 1/2 Cups Confectioners Sugar
1/2 TSP ground cinnamon
1/4 TSP ground all spice
1/4 TSP ground ginger
1/4 TSP ground cardamon

1. Using a stand mixer or hand mixer, beat cream cheese, butter and vanilla until fluffy
2. Add spices and confectioners sugar gradually until all combined
3. Spread frosting over top of bread
Slice and serve.... and don't forget to serve with a chai! Enjoy.
