Easy Pumpkin Chai Baked Donuts

 

Happy chai month! This week we have another fall chai recipe for you chai enthusiasts.

These are super simple, baked donuts that will have everyone OBSESSED!!!

Let’s get to the recipe! For these you’ll need a mini donut pan. There’s a great one on Amazon for $10.

To make these, simply start by spraying your mini donut pan with a non stick spray and preheating the oven to 400 degrees.

Next, mix the all purpose flour, baking powder, homemade chai spice (whip it up in 30 seconds here), salt, and baking soda in a large bowl.

Grab an electric mixer with a paddle attachment and beat together the vegetable oil and brown sugar on medium high until it’s fully combined. Add one egg at a time add to that until it’s all combined. Beat in the vanilla and pumpkin until it’s just combined.

Little by little, add the dry mix at a low speed, until it’s just combined.

Spread into the mini donut pan and bake in the oven for 10-12 minutes.

Now you’re going to grab some of that homemade chai spice and whip up the chai sugar coating for when those donuts come out of the oven. (I like mine with a strong cinnamon flavor so I added a bit more)

Take your sugar, cinnamon, and chai spice and combine in a small bowl and set on the side.

Once the donuts are done, allow them to cool off. Melt some butter and brush over the donuts and toss in the chai sugar coating.

Ingredients

Donuts:

  • 2 cups all purpose flour

  • 1 1/2 tsp baking powder

  • 2 tsp homemade chai spice

  • 3/4 tsp kosher salt

  • 1/4 tsp baking soda

  • 1/2 cup sugar

  • 1/2 cup brown sugar (packed)

  • 1/3 cup vegetable oil

  • 2 large eggs

  • 1 can pumpkin puree

  • 2 tsp vanilla extract

Chai Sugar Coating

Instructions

  1. Preheat oven to 400. Spray mini donut pan with non stick spray.

  2. Mix the all purpose flour, baking powder, homemade chai spice (whip it up in 30 seconds here), salt, and baking soda in a large bowl.

  3. Grab an electric mixer with a paddle attachment and beat together the vegetable oil and brown sugar on medium high until it’s fully combined. Add one egg at a time add to that until it’s all combined.

  4. Beat in the vanilla and pumpkin until just combined.

  5. Little by little, add the dry mix at a low speed, until it’s just combined.

  6. Spread into pan and bake for 10-12 mins.

  7. Melt butter in a microwave safe bowl. Mix together in separate bowl your chai sugar coating ingredients (sugar, chai spice, cinnamon).

  8. Once donuts are cooled, brush with melted butter and toss in chai sugar coating.
