Chai Spiced Apple Pear Crumble Recipe
So the other day, my dad was making chicken tikka masala (my favorite dinner of all time) and I felt like making some sort of dessert.
That morning I had some green tea, then chai at lunch so safe to say I was highly caffeinated, and therefore more motivated for the rest of the day (haha).
I saw that I still had a bit of my homemade chai granola left over, as well as my chai spice mix and wanted to use it in something. This was also before the grocery day for the week, so I had some apples and pears laying around that I could put to use.
A fruit crumble is not difficult nor time consuming to make, and the end result is delicious! This is a chai spiced apple and pear crumble.
Start off by preheating your oven to 400 degrees. Grab a 9x13 dish and spray with non stick cooking spray and set aside.
Youβre going to take your apples and skin and cube them, then place in a large bowl. Cube the pears as well and toss those in and mix together.
Add 1 teaspoon of lemon juice to the fruit and mix.
Now, youβre going to take your chai spice mix (if you havenβt made it before, check out this post here - you can whip it up in 30 seconds!) and add 2-3 tablespoons to taste. Next, add 100% maple syrup and vanilla extract. Mix so that the fruit is completely coated with this mixture.
Fun fact: You can use maple syrup as a sweetener for your cup of chai! It adds a different dimension you donβt get from traditional sugar. Try it the next time you make some chai!
Pour your fruit mixture into the 9x13 dish, then letβs get working on the topping.
In a large bowl, add your leftover chai granola (about 1-2 cups) and 1 stick of unsalted butter, diced into cubes. Add the brown sugar, couple pinches of salt, and an extra 1/2 teaspoon of chai spice if you want more of a chai flavor.
Mix and break up the butter with your hands, making sure to fully incorporate. Then, add the shredded coconut (sweetened or unsweetened, either works) and mix together thoroughly.
Itβs ok if itβs clumpy, thatβs what you want!
Spread the topping on top of the fruit in the dish evenly, making sure it covers completely. Pat in and pop in the oven for 30-40 minutes, until the top is brown.
Once itβs done, youβre all set to serve! If you like, serve with some vanilla ice cream on top.
This is so delicious, and you get that chai essence which goes so well with the pear and appleβs flavors.
